Botanical Extractions for Non-Alcoholic drinks

The market for non-alcoholic beverages is growing rapidly. One area of the market is premium drinks made from botanical extractions that can serve as a liquor substitute or as a primary ingredient in mocktails. This experimental project would include experiments to optimize the extraction process for botanicals, determine a final formula and design the scaled up process for making these extractions and beverages.
